This dataset contains the raw experimental data supporting the results presented in the manuscript entitled “Valorization of orange peel by-products via ultrasound-pretreated enzymatic extraction of soluble dietary fiber: structural and functional characterization.” The data correspond to the recovery and characterization of soluble dietary fiber (SDF) obtained from orange peel by-products using conventional and ultrasound-pretreated enzymatic extraction methods.
